Sparkling Pomegranate Mocktail with Thyme (and a Twist of Lime)
Pomegranate is sweet, tangy, and refreshing, which makes it an ideal base for both cocktails and mocktails.
I did some experimenting recently to identify the best flavors to complement it, and I believe I created the perfect pomegranate mocktail!
In this drink, thyme syrup adds a subtle herbal undertone that enhances the fruitiness of the pomegranate without overpowering it. A squeeze of lime brings the citrusy sharpness every good mocktail needs for balance.
And of course, there are plenty of bubbles (almost always essential).
The first time I made this drink, I accidentally chugged the whole thing — it’s that good. So if you’re looking for a refreshing, wintry beverage, try this sparkling pomegranate mocktail with thyme and lime.

Ingredients & Equipment
Here’s what you need to make this bubbly pomegranate mocktail.

Pomegranate Juice
The most important ingredient is pomegranate juice. The key is finding one that’s not from concentrate.
I got mine at Trader Joe’s, but I’m pretty sure it’s seasonal since I haven’t seen it in a couple of months. If you can’t find juice that’s not from concentrate, you can substitute one that is, but just know it usually tastes sweeter and a bit more processed.
You can also make your own pomegranate juice if you’re up for a challenge!
Fresh Lime Juice
You’ll also need fresh lime juice. Trust me and skip the bottled stuff. One lime should be plenty!
Thyme Syrup
Thyme syrup is a key ingredient that balances the mocktail and adds depth of flavor. I make my own (it’s super simple), but you can also buy thyme syrup if you prefer a shortcut.
How to Make Thyme Syrup
To make your own thyme simple syrup, follow these steps.
- Combine equal parts sugar and water in a small saucepan over medium-high heat.
- Stir occasionally until the sugar dissolves, then bring to a boil.
- Remove from heat and add 2-3 sprigs of fresh thyme.
- Cover and let steep for 5-10 minutes, until fragrant.
- Discard the thyme, then let the syrup cool. Store in the fridge until ready to use.
Spindrift Lime Sparkling Water
The last ingredient you’ll need is Spindrift lime sparkling water.
And in this case, the brand really does matter! Spindrift uses real fruit juice and has less carbonation than most sparkling waters, which makes for a smoother, more flavorful drink.
If you can’t find Spindrift, you can substitute another lime-flavored sparkling water, but the results won’t be quite the same.
In addition to your ingredients, you’ll also need a cocktail shaker and ice (for both shaking and serving). I like to serve this drink over large, clear ice cubes — check out my clear ice cube tutorial to learn how to make your own!
I also use fresh thyme sprigs and pomegranate arils for garnish.

Ingredients
- 2 oz pomegranate juice (not from concentrate)
- ½ oz fresh lime juice
- ¾ oz thyme syrup* (see notes)
- 3-4 oz Spindrift lime-flavored sparkling water
Instructions
- Combine pomegranate juice, lime juice, and thyme syrup in a cocktail shaker with ice.
- Shake for 5-10 seconds, then strain into a cocktail glass over ice.
- Top with 3-4 oz of Spindrift lime-flavored sparkling water to taste.
- Garnish with fresh thyme sprigs and pomegranate arils, if desired.

Juice that’s “not from concentrate” is typically fresher and has a more natural, tart flavor, which works better in mocktails. “From concentrate” juice is often sweeter and more processed-tasting, which can make your drink overly sweet or dull the brightness of the other ingredients.
What does thyme syrup taste like?

Can I use another sparkling water besides Spindrift?
