Mimosas are always a crowd-pleaser, and oranges happen to be the perfect color for Halloween.
I had the best mimosa of my life at a tiny brunch place on the west coast of Spain, and ever since then, I’ve been on a mission to recreate it. That Spanish inspiration is what led me to use cava (Spain’s signature sparkling wine) and Valencia oranges — both perfectly suited to this fall twist on a classic.
If you can find Valencia oranges, they’re in season from late spring through early fall, and add something special: the last fruits of the harvest. Their balanced sweetness and deep golden color make them the ideal base for this drink.
Triple sec adds richness and depth, while cava brings brightness and bubbles. Finally, a splash of grenadine lends subtle pomegranate flavor and layered color that mimics the glow of a jack-o-lantern.

- 1 champagne flute
Ingredients
- 2 oz fresh-squeezed orange juice* (¼ cup)
- ½ oz triple sec (1 tbsp)
- 2 ½ oz cava (¼ cup + 1 tbsp)
- 1 splash grenadine

How to Batch Halloween Harvest Mimosas
Hosting a Halloween party? You can easily make a large batch in advance — just don’t mix it too early.
For the best flavor, prepare it no earlier than the day of to keep the citrus juice fresh, and wait to add the bubbles until right before your guests arrive.
Batched Recipe (Serves 10):
- 20 oz fresh-squeezed orange juice (2 ½ cups)
- 5 oz triple sec (⅝ cup)
- 25 oz cava (about one 750 ml bottle)
- Grenadine, for serving
Instructions:
- Chill all ingredients thoroughly.
- In a large pitcher or drink dispenser, combine orange juice and triple sec.

Does it matter what kind of orange juice I use?
