Ribeye Tacos with Crispy Cheese-Crusted Tortillas
The best ribeye tacos I’ve ever eaten in my life were at a resort in Mexico.
The steak was tender and delicious, and the tacos were topped with sautéed onions, pico de gallo, and guacamole — an excellent flavor combo. But what really set these apart was that the tortillas were pan-seared with mozzarella cheese, which gave them a delicious golden-brown cheesy crust.
Of course, cheese makes everything better. But we realized that, in addition to the flavor, the crispy mozzarella kept our tortillas from getting soggy and breaking, which is a common taco occupational hazard. Mind = blown!
Quite literally the moment we got home, we set out to recreate this ribeye taco recipe. Sometimes when I try to replicate dishes I enjoy in restaurants, I end up disappointed, but I’m pleased to report that these tacos are just as delicious as the ones we had in Mexico.
The only thing that would maybe improve them is enjoying them by a pool with a swim-up bar… can you tell I’m over pregnancy and ready to be on vacation?

Ribeye Taco Ingredients
Here’s what you need to make these ribeye tacos.

Oil
You’ll need oil for every stage of this recipe: the onions, the steak, and the cheese-crusted tortillas.
You can use canola or olive oil — I prefer canola here since it has a higher smoke point, but it’s totally up to you!
Ribeye Steak
The ribeye is non-negotiable, since the marbling is what makes it so tender and flavorful. It’s also important to chop it into small pieces (about ½-inch), which helps it cook quickly and stay juicy.
Taco Seasoning
You’ll need a mix of spices to season the ribeye. I use a blend of smoked paprika, cumin, garlic powder, onion powder, dried oregano, cayenne, salt, and pepper.
You can also use a premade taco seasoning or create your own blend, depending on what you have in your kitchen.
Sweet Onion
Using sweet onions is one of my favorite cooking hacks from my mom. They’re delicious and have a milder flavor than yellow or red onions.
Bonus: I also use sweet onion in my 4-ingredient guacamole recipe (which I highly recommend for these tacos), so you can use the leftover onion if you’re making both!
Flour Tortillas
I usually prefer flour tortillas over corn, but flour tortillas are a necessity for this recipe. They’re sturdier and can support the cheese crust, plus the flavor complements the ribeye so well.
I haven’t tested this recipe with corn tortillas, but they tend to be more fragile and might fall apart under the weight of the cheese.
I love Trader Joe’s Mini Sonora Style Tortillas, but any taco-sized flour tortilla will work.
Shredded Mozzarella Cheese
The magic ingredient for these tacos is shredded mozzarella cheese, which you’ll use to make the cheese-crusted tortillas.
You just need a couple of tablespoons per tortilla. I wouldn’t recommend using fresh or sliced mozzarella here. Shredded cheese melts much faster and more evenly.
Pico De Gallo
For serving, you’ll want some pico de gallo for acidity and freshness. You can use mild or spicy, depending on your preference.
I love Trader Joe’s brand. But you can also make your own if you’re feeling ambitious!
Guacamole
Lastly, you’ll need some high-quality guacamole on top.
I recommend my 4-ingredient guacamole recipe since it’s so simple, and the lime really brings out the flavor of the ribeye. But you can always use a store-bought version or your own favorite recipe.

In a pinch, some sliced avocado would also work, although I’d recommend adding a squeeze of lime for acidity.
Step-by-Step Instructions
This recipe is quite easy, but there is a little bit of multitasking involved. Here are the steps to making these tacos.
1. Sauté the Onions
First, heat a small skillet or frying pan over medium heat with a drizzle of oil. Sauté the sliced onion until softened and lightly browned, then leave it on low heat until ready to serve.


2. Chop, Season, & Sear the Ribeye
Next, trim excess fat from the ribeye and chop it into small pieces, about ½ inch. Combine smoked paprika, cumin, garlic powder, onion powder, dried oregano, cayenne pepper, salt, and pepper in a small bowl.
Rub spice mixture and a drizzle of oil into the ribeye, then let marinate for at least 5-10 minutes.



Meanwhile, heat a large skillet or frying pan over high heat with 1-2 tablespoons of oil. Sear ribeye until browned and cooked to desired doneness, stirring occasionally.



Since the pieces are small, the ribeye will cook quickly, so keep a close eye on it!
3. Make the Cheese-Crusted Tortillas
Now for the cheesy tortillas — the best part! This technique is actually called costra in Mexico, and it’s both delicious and practical thanks to its flavor and the added tortilla reinforcement.
While the ribeye is marinating, heat a large nonstick skillet over medium heat with a thin layer of oil. You can use an oil spray or regular oil with a pastry brush to coat your pan. My husband likes to use a spatula and paper towel to disperse the oil — kinda janky, but it works!
Important: A nonstick pan is key here. If you don’t have one, you could try using a little more oil to prevent sticking, but I haven’t personally tested it and wouldn’t want you to ruin your dinner (or your pan).
Sprinkle about 1 ½-2 tablespoons of mozzarella cheese onto the pan, and wait around 30 seconds until it starts to bubble, then press a tortilla firmly onto the cheese.


Cook the tortilla for about a minute, until the cheese is crispy and browned and the tortilla is heated through, then remove from heat with a spatula.

Repeat for as many tortillas as desired. If your pan is big enough, you can cook multiple tortillas at a time. You may need to add a tiny bit more oil between tortillas to keep things from sticking.
Stack tortillas (you may need to separate with parchment paper to prevent sticking) and cover until ready to serve.
4. Assemble & Serve
Once all your components are done, assembly is easy.
Fill each cheese-crusted tortilla with ribeye, sautéed onions, pico de gallo, and guacamole, and serve. Thanks to the crispy cheese crust, these tacos are best enjoyed immediately.

- Cook the tortilla for about a minute, until the cheese is crispy and browned and the tortilla is heated through, then remove from heat with a spatula.
- Repeat for as many tortillas as desired, adding more oil to the pan as necessary.
- Stack tortillas (separated with parchment paper if needed to prevent sticking) and cover until ready to serve.
Taco Assembly
- Fill each cheese-crusted tortilla with ribeye, sautéed onions, pico de gallo, and guacamole. Serve immediately.

How do I prevent the cheese from sticking to the pan?
Be sure you’re using a good nonstick skillet and that the oil is evenly distributed. Wait the full 30 seconds for the cheese to bubble and stabilize before you press the tortilla down, and then wait about another minute until the cheese is crisped and browned. If you flip it too early, the crust might stay in the pan.
Can I use a different kind of cheese?
I recommend mozzarella because it has a mild flavor and melts easily into a golden-brown crust. You could also use Monterey Jack or a mild provolone, but avoid anything too oily (like sharp cheddar) or too wet (like fresh mozzarella), as they won’t crisp up the same way.
Do I have to use ribeye?
Technically, no, but it’s the best for a reason. If you need a cheaper alternative, you could use sirloin or flank steak, but you’ll lose a bit of the tenderness that makes these tacos so great. If you go with a leaner cut, just be extra careful not to overcook it!
Can I make these tacos ahead of time?
You can prep the spice mix and marinate the steak a day in advance. However, the seared ribeye and especially the cheese-crusted tortillas really need to be made right before serving.
If the cheese crust sits too long, it loses its crunch, which is the whole point. (The sautéed onions are more forgiving — you can make those ahead of time and just keep them warm!)
