Sparkling Lavender Mocktail with Lemon & Elderflower

  • Optional: Rub a lemon wedge around the rim of a cocktail glass, then dip in sugar.
  • Add lemon juice and lavender syrup to a shaker with ice. Shake for 5-10 seconds until chilled.
  • Strain into a glass over ice, then top with elderflower tonic water and sparkling water.
  • Garnish with a lemon twist or a fresh lemon slice.

**For a more lavender hue, use a toothpick to add food coloring to the finished drink. Start with a tiny amount of blue, then add a very small amount of red, stirring gently but thoroughly after each addition until a soft lavender color is reached. The lemon juice will naturally mute the color, so adjust slowly to avoid a muddy tone.
This recipe yields about 9 oz and fits most standard cocktail glasses. For a larger (highball-style) drink, multiply by 1.5:
  • 2 1/4 oz lemon juice (¼ cup + ½ T)
  • 1 7/8 oz lavender syrup (3 ¾ T)
  • 3 oz elderflower tonic water (¼ cup + 2 T)
  • 6 oz sparkling water (¾ cup)
